Up here in Canada it’s Thanksgiving weekend. Personally, I will be roasting a duck because the oven where I am isn’t big enough to accommodate a turkey. That’s just how flexible a cook I am. I’m not entirely sure how the beast will turn out, but I’m pretty confident the chocolate pumpkin tart will work just fine. It’s a Martha Stewart recipe – it can’t go wrong.
I have lots to be thankful for, and I will do my best to conduct myself accordingly.

A little thing to try with duck or goose some day. Instead of roasting as is in its skin, skin it and wrap it with bacon strips then roast as usual. Really really good and you don`t have to deal with all that fat. Med rare like beef is how we preferred it.

Hee hee, as an American in Canada, I get two Thanksgivings this year (alas, both without my husband, thanks Navy! Sort of hard to be thankful about that part, but I am thankful that I finally live with him, woo hoo!). You just can’t have too much Thanksgiving.
Bob, that sounds amazing. There’s no such thing as too much bacon. Now THAT’S something to be thankful for.
